2:30 at night, still can't record decent audio...
Whatever I do, I can't get decent recordings from within Ableton. It works fine in other recording tools.
The audio is like 3 bit quality and super low volume. I've tested with multiple audio interfaces (focus rite 2i2 and mackie profx). Nothing works from within ableton. But it does work in my wavepad audio editor. There the volume is ok and the quality is super good. Is my ableton corrupt or something? It's not my mac, it's not my device/synth, it's not my cables, otherwise the wavepad audio recording would fail. It has to be ableton specific.

It’s probably your Sample Rate. In Settings > Audio
Try switching it to 44100 and recording again

Does the monitoring sound pretty normal? Would be good to rule out whether it is an audio input problem, or if it is a file playback problem.
Additionally, do you have your session clips set to any particular Warp mode? Have you tried other warp modes?

Recording works well in garage band or in wavepad audio editor. So That rules out USB problems, driver problems, Midi problems, Cable problems, monitor problems. Only in Ableton it appears to sort of gate the audio

Are you using the version of Live specifically made for M-Chip Macs and not the older Intel version running in Rosetta?

Halleluja! Mariana from Ableton Support helped me to fix it!! So happy to have this solved!
On a Mac, once you use recording in an app (like chrome voor google meet, or zoom, or Ableton) a microphone appears in the top bar. If you click on it, you can set the mic mode. For some reason in Ableton it was set to voice isolation, instead of standard.
After I set this mic mode to standard, recording worked fine!
This explains why in other apps it worked, but in Ableton it didn't. I must have change this value at a certain point.
