Using Live 11 Intro 11.3.21 Build : 2024-01-22
It looks like this question was asked a few years ago here, but was never answered.

So I like to start recording using my guitar. Just noodle around until I find something I like and then record it. I don't know what the tempo is going to be, so I disregard it until I have to add a beat. I have to adjust the global tempo for the drum machine, so I should be able to freeze the riff and adjust the tempo. Freezing the riff seems to work fine, and when I adjust the tempo it doesn't change the riff from what I can tell in arrangement view. However, the playback is really screwed up. So if I set it to 60 bpm the playback is messed up until I set it back to 120 bpm (in this example). I've uploaded a video on my Google Drive at the link below.

Ableton Live 11 Intro - Frozen track not playing back correctly after Tempo Change
Re: Ableton Live 11 Intro - Frozen track not playing back correctly after Tempo Change
In my own experience free form playing into Live and then trying to get Live to organize it's tempo and bar line structure around what I played is a hard thing to do. That said, it is not hopeless and many people have success with the doing so. Most of the music I make is weird electronic stuff that isn't in a clear meter (often in shifting multi meter) so it makes sense that Live can't figure out what I'm doing.
On of the most effective ways I have found is to export the clip you are trying to align to and bring it into Melodyne and convert it to midi. Melodyne does a pretty good job of figuring out the tempo and time signature. The MIDI file contains the tempo information and you can tell Live to follow the MIDI clip which forces the bar lines into alignment with the tempo.
Another approach is to add warp markers to the clip and then in Arrangement view setup Live so that the clip is set to Leader and the follow button at the top close to were the tempo is displayed is activate.
Here is some documentation on the clip follower leader thing.

It seem you are doing pretty straight ahead guitar stuff. If I was in your shoes, once I found a cool riff, I would just figure out the tempo, I want setup a click or program a quick beat to hold the vibe and then play and record it again. Might take less time and be more fun.
Back to your project as it stands, why you are freezing the guitar track?
