Looper / Delay question

Hi all,
I have the following questions:
A) Is there a Looper plug-in that allows me to extract all overdubs as separate tracks after I'm done overdubbing? This is for Audio looping.
or B) (this would be my workaround)
Is there a Delay plug-in with a midi-assignable Tap Tempo function? Or has anyone here ever built this for themselves?
Basically, I'd like to play Ableton like a classical loop pedal (hands-free), but also have single tracks after jamming, so I can further develop the ideas. I play experimental/ambient music, so I wouldn't want to set the tempo before starting.
I'm an Ableton beginner, working with Ableton 12.1.1. Suite. I know the Ableton Looper, but it doesn't allow me to extract overdubs separately without dragging/dropping in between each loop. This workflow would really kill my jam, literally speaking.
Can you help me with A or B, or do you have another idea how to do this?
