It feels like the silliest question to ask, but here I am.
I like to open a blank session and start recording stuff. I never know what tempo I'll end up with or where a project will take me. Once I have a sense of time signature and tempo, setting a new tempo globally feels impossible. Whether MIDI or audio clips, Ableton insists on warping things. I've tried manually clicking through every audio file and disabling warping, but I don't see a way to do this with recorded MIDI files. Is this just how Ableton is? Is it impossible to change the tempo and have Ableton not touch anything I have previously recorded? I would think this is such a simple thing to do (change tempo: don't touch my recordings). I have also disabled warping with tempo change under settings, which still does not work with MIDI clips.

What you're trying to achieve will only work if you record at a certain (fixed) BPM - so if after your recording you can establish what exact BPM that is you can set all your recorded clips and the master tempo to that specific BPM so Ableton does not have to warp anything (you can turn warping off in that case)...
For Midi clips it is possible to manually type in the BPM value as warping only applies to audio
