Unable to properly record Audio into Ableton Live 11/12

Hello everyone,
I've waited way too long to ask this, but it's annoying me to no end and I'm hoping to find a solution.
I bought a Mac Studio in Dec 2023. For the most part, it's been a dream. However, about a month in from buying it, I noticed that whenever I try to record audio from my interface into Ableton (either my UAD Apollo or old Focusrite), the monitoring in UAD Console is alright for example, but the audio file that's recorded is distorted and constantly drops in and out. If I play a strong note or sing a loud note for example, it'll register it and then distort and drop down to -inf db, stay there for 2-4 secs, then re-engage shortly at the next loud note.
It's complicated my workflow on the Mac by a large margin - If I want to record any audio sources, I have to use another DAW like ProTools or Logic, export the audio files from there, and then put them in the Ableton Session. Does anyone (Ableton Support or any users) know what might be happening? I thought upgrading to Ableton 12 might help, but I'm just paying for a compromised upgrade as is.
**I should add, Ableton works perfectly fine on my old 2018 MacBook Pro, and records audio well with no problems there. It's just that the laptop takes off like an airplane whenever I do anything more than use Safari, and it would be helpful to use all of the features of the DAW I purchased
