Audio to Midi

Hi,
I’ve been trying all day to convert an analog signal that is fed into the program through a Scarlett Solo live into spherical sounds, without hearing the original noises themselves. I can distort or process the sounds, but that’s not what I want — I want to measure the sounds and transform them into suitable sound patterns.
My setup was: one track for the audio input of the noises, where I remove unwanted noise; then a second track where I tested, among many others, the apTrigga3 plugin or the built-in Max envelope follower.
The data should then be converted into MIDI instruments on a third track.
Is this simply not possible, or am I just using the wrong approach?
Feel free to suggest alternative programs as well.
