I want to build my effect - sort of like, make it sound like it's getting more echo-y as the track progresses.

I want the echo to build. Does that make sense?

Do I have to do it "live" or is there a control that can control the effect's effect? I can control the effect with and on/off switch - but I want more of a fade.

I don't want ALL the echo at once - I want it to build.

I am talking in circles. But I just want my question to be clear ...

try putting it on a return and slowly turn up the send. That's the basic way of doing it. If you want more then try increasing the feedback.

and if it's an in-line effect use the dry/wet knob.

But is this done live or is it something I can map out using the mixer controls?

If using Live you can either map out the controls on your controller using midi learn very easy or .....

Use the delay as an insert effect on the track itself.
Then select the delay from the clip properties and draw clip automation for for both the wet/dry signal and feedback back amount for that clip.
So everytime that clip is fired it behaves in the same manner.
You could even ctrl d the clip and make one version a one shot sample cycle and another a loop that kept having an ascending crescendo delay on each repeat for example.
Lots of options to exepriment with here.
Either via direct track insert or via the more conventional send and return method mentioned above.
