quantize during midi recording

hi !
i just can't understand : i want my midi play being quantized during overdub recording. (a simple thing !)
let me explain/show ya : i select the "quantize recording" to (for exemple) 1/4.
in the arrangement section, let take an impulsed midi track, rec enabled, and then let's record in looping mode (with my keyboard). ok i see the midi notes being quantized at the second "passage" (take) : they move to a 1/4 tick. that's what i asked, ok. i don't stop the play (the loop), but make recording and stop recording, and make recording and so one (overdubbing). and then i consolidate theses little pieces of midi to get a one bar midi part (there is between 2 and xxx of littles pieces of midi writes, i just want one barsized midi part in order to manipulate it more easily)
-->and then i lose the quantization (i can see the notes not in the right tick and i STILL can quantize to 1/4 it with the manual quantize fonction (apple U) : if it was 1/4 automatically quantized i should not be able to do this).
the mac is ok (live403 osx os9).
is it a consolidation issue, an overdubbing issue, a midi latency issue, or what ?
