For live shows I want use a midi controller...say an Axiom 25 to control synth software within Ableton. How much of a latency issue will i have? Is it best to use a real synth?

Presonus Firebox

practically none...you wont really notice it, and if you do, you'll figure out how to compensate for it after about 2 minutes. I wouldn't worry about it. OS X has CoreMIDI, which is a MIDI driver that was developed to reduce overall MIDI latency and whatnot.
