So I made a rack that has a bunch of different EQ8s in it and one big knob to move through them all. (the idea is to get a talking effect from some loud guitar chords...) When I use the big-knob though its really difficult to cut to exactly the chain I want so I wanted to be able to somehow setup my trigger finger so that pushing a pad would activate one EQ8 while another one would deactivate it and activate another basically using it like a preset for the knob position. Any ideas?

There's quite a few cool tricks with the chain selector and midi mapping, I hope this one is the answer to your question:

Set your trigger finger to "control mute" by hitting the Ctrl/Note Mute button until it says "Ctl". Midi learn the chain selector for your stack of EQ-8's. Tap one of your trigger pads to map to it, and in the MIDI Mappings panel set the "Max" value to the number of EQ-8's you have. Exit learn mode (and turn off control mute) and you can repeatedly tap the button to cycle through all the elements in your chain.

If you want to be able to set each button to "jump" to a specific preset, hold down two pads at the same time when you learn them, and you'll see it learn to a "range" of all the notes in between them. On my preset, for example, it learned "C3:G3". Now any note in that range will snap the chain selector to its portion within the min and max values. Hope that works for ya!

Very nifty! I didn't know that before. I take it you could do this with any midi controller?

Yes, as long as your controller sends note messages; it probably won't work with CC, program change, transport controls, etc. -- Some controllers don't send the note messages by default, but can be configured to. Otherwise, you may be able to convert the messages using something like MIDIOX...

But in short, yes, it works on other controllers.
