I find limited use for my APC40 MKii when putting tracks together. Yes you can do arrangement with it by creating scenes in session view, then recording the triggering of them into the arrange window, but to effectively use all the controls requires an amount of setting up which I can't be bothered ...

How are you trying to record? Amplitube is an effects plugin so for it to work you need to put it on an audio channel and record your clean guitar straight through the preamp. That means that if you disable amplitube it will most likely sound really dull and rubbish, but enabling Amplitube simulates...

I liked Amplitube before I got a valve amp to mic up instead! I could get some quite nice boxy bluesy tones out of the AC30 models.

Hmm that sounds like a software issue somewhere rather than a hardware bottleneck - you shouldn't have audio crapping out at 58% CPU usage. What soundcard are you using? Are you using up to date ASIO drivers? What are your buffer settings?

I use bus tracks instead of groups because you can't group within groups. Other than that they are the same.

"Expensive" instruments does not necessarily = a high quality sound. Live's instruments are some of the best sounding integrated instruments in a DAW that I've used, you just have to get creative.
