You can use the input choosers for a MIDI track to pull data from anywhere you want. Try exploring in the I/O section of a channel; you can find some complicated stuff.

You can also use the editor to easily alter the way that the xy pad works. You can change which CC's it uses, and their polarity. You can also choose which values they reset to when you "release" them, like a real pitch bend wheel.

You can achieve what you're asking about by using the padKontrol editor to set up your desired MIDI mapping and saving it to the pK.
