Hold down shift when you press play and the transport will pick up from wherever you stopped it last. If you want to loop part of a song, enable looping in the tool bar and then drag the loop markers to where you need them.

MidiPipe is a midi routing app, I think MidiOX (and one of it's tools) does something similar on a PC.

You'd need to make a new clip with an extra 3 beats of silence, with "you're" appearing at the 4th beat. So basically, you need to trigger the vocals a bar early, but it will work.
