Well seeing how you're just starting out, I will offer this simple advice. STUDY A LOT! There are tons of reference material on the internet on mixing. The problems are just too many to comment here and you should learn some more on your own. Perhaps some here will give you some tid bits here and there. Keep at it and you should improve.

Problems?
if there are too many problems to list (damn, that's a lot of problems) i think some may be intentional...
i'm not sure i want any of these to sound like a rap or hip hop track (or anything anyone's ever heard, that's definitely my main goal).
could you maybe just hint at me a tip that doesn't have to do with, quantization, chord "problems" (if that even exists), or the sound quality of the music?

holy crap, i saw the other two comments and expected the worst, but i really like the "jazzy horn beat".
I guess they were mostly referring to the mixing. there are definite mixing problems on some of these.

There is nothing wrong with the ideas for the tracks, afterall it is art. In fact I like some of the tunes. But if you think you don't have any of the above issues, just try and use reference material from some commercial tracks and you will see the deficiencies yourself. But as noted you don't want any comments about that. I guess you want to hear someone say just the positive things. any videos on tutorials that are especially special? i've seen too many i don't like..

I generally look at every video of the multitude of applications that I own and always walk away with something interesting. Mostly to inspire new or different techniques even though I may never apply them the same way or agree with the way it's done. There are so many ways to accomplish the same task. It's just a matter of your particular work flow. More important is that end users, producers, mixing engineers, sound designers and the like are sharing their experience for all to benefit.
