Yo. Would it be possible to apply any sort of swing / groove to the output of an audio track?

yes, if the audio track were playing a clip which was equipped with warp markers

You'd have to fake it with gating/volume automations, repitching effects w/ synced LFO's, filtering, delays and buffer repeat type fx.
One simple thing you can try is two AutoPans. set to maybe 50%, that are beat-synced with shape of choice. Adjust the Offset and you are good to go (btw, triplets are fun to use
). Just use the fx in awkward intervals and offset in strange ways.

go into your piano roll of whatever midi instrument you are using, and switch the groove to "Swing 16". Then go up to the swing box next to the BPM indicator in the top left of ableton and raise it to your preference.
