If you want free, there's one called 'Crystal' that is really rather good. If you want to pay, you can go far wrong(er) than NI Absynth 5.

check http://www.dontcrack.com for several freebees, all legal.
there are around 4-5 free AU / VST for mac synths you can find on there all rather useful.
it's a good site to check every 2 - 3 month for some interesting free synths / plugs.
and yes a double thumbs up for crystal, i love that synth, it is a bloody CPU hog, but sounds great.

octopus synth is reallllly nice
if you can afford to buy a copy of reaktor 5 then you get access to a massive user library of synths, samplers, effects etc

Reaktor can be run on it's own, or as a VST. It is a modular processing environment where users can make their own synths/fx/drum machines etc - as buzby said.
The user library alone is a fantastic resource. Amazing value for money, and interesting devices are being made all the time. You won't find better value for money, period. And the sound quality is exceptional.
It's not cheap though, but used licenses generally go for around $150ish. Also, you could buy an educational license for cheap on ebay even if you're not a full time student.

Zebra 2, the arpeggiator in it alone is enough reason to get it. <-- especially if you like that sort of evolving LFO driven filter sweep thing from trance, house etc. It's deep, and I personally use it often, even owning classic analogue synths.

U-He ACE is very nice and cheaper than most. Sound is excellent (a big improvement on Albino in my opinion) and there's more to it than you'd think at first glance.
