So, this is probably in the manual but... Is there any way of setting a midi controller so that it controls volume on the selected channel instead of a specific channel? I don't have so many knobs and sliders on my oxygen 8, so it would be kind of useful...

look up Automap and Control Surfaces in the manual.
I don't have that controller but it might be as easy as selecting it in Control Surfaces (options-preferences-midi) then hitting the DUMP button in Live then saving the template off in your controller. that option might not be available for your controller, just a quick guess.

The closest thing I can think of is if you had a single-knob Rack in every channel containing a Utility. By using this in combination with the User Remote Scripts you could basically be doing what you are saying.. It just would be a pain having to always throw that rack into a channel. (although it could be handy if it had a few extra controls you like having available).
