R.E.M.'s "New Adventures in Hi-Fi" is an album of previously unreleased material mostly recorded live, either in the concerts themselves or during the soundchecks, with some tinkering done later.

Also, the first album from the Blue Moon Boys (from Fort Wayne, Indiana) was a live record called "Live in New York". It's got some great originals with some classic covers mixed in. It's a wicked fun record (if you like raucous rockabilly) with some stunning guitar work.
