OK, imagine you have two instruments playing the same melody. If you apply the same groove on tem, but set the random amount differently, then the two instruments will play the same, but slightly off to each other. This gives a more human feel to it, nearly as if two human instrumentalists play.
Or you have a sampled drumloop. Use the extract-groove functionality. Drag the newly created groove into an empty clipslot on a drumrack-channel. Now you see a midi-clip with notes/hits of different velocities on each hit of the original drumloop. Use those notes to build your own drumloop - just drag them up and down onto different sounds of the drumrack. Like this you can steal grooves from loops, creating rythms that you probably would not get when drawing notes onto the grid of the midi clip.

Swing, shuffle, or sometimes groove, is used to give a more human element to an otherwise static loop or sequence. Music with no groove will sound very robotic and mechanic, (think kraftwerk) while music with swing will sound more human, (think funk) depending on the syncopation and where your emphasis lies you will get different sounding grooves, a 16th groove will give you more of a funk feel on a 4 on the floor loop while an 8th will be more of a dubby sounding groove. The amounts of also play part on this.
I use (swing/grooves) on almost all my drum parts, and bass lines. The rest I usually get it to play off that by extracting the grooves off my drums and bass. This helps get those parts which don't quite fit to sit just right.
For dubstep try switching between 16th and 8th loops on the bass lines. Also, rather than putting swing on the drum loop themselves, use the swing in other areas, for example on a single arpeggiated note, or on an LFO.

I heard the solution in a sample by LX Paterson from the Orb:
The second one is shorter than the first one.
