My grandmother from Mexico had her own Mexican restaurant as do some of the relatives from her extended family (3rd cousin once removed and such) and there is indeed a reluctance to accept ground beef as part of an authentic taco. :)

Funnily enough the authentic tacos in that picture look exactly like the ones we get off our lunch time roach coach….run by Asians. 8O :)

But seriously, some of the best Mexican food here comes from roach coaches.

True that. I was just saying that anybody who has even just considered cooking something beyond just reading the instructions off the back of a box or can knows the name Rachael Ray while those deep in the culinary arts probably scoff at just the mention of her name.

…much like Tiesto in the electronica world. :x

But since I'm not a fine dining purest I just go by good food is good food.

http://www.mamatestataqueria.com/ The crisp tacos are for the gringos..I've never seen a crisp shell in Mexico. Street tacos are typically small( 4") soft corn tortillas...preferably freshly hand patted.

This is a "semi-upscale" place. Local stands or trucks may also have Cabeza(head meat) Lengua (toungue), Tripe, Birrea (goat)...

I bet. She has really plumped up over the years but in the world of celebrity I think you can hardly blame somebody whose reason for celebrity is cooking.

It's a small miracle the host of Man vs. Food isn't like 4 times his size at this point.

Hands down best tacos are authentic lingua tacos. If the tongue is cooked proper it is the most tender, delicious bite of taco.

Sunday morning I went to a new Taco place that opened up down the street, not your authentic style Mexican, it's like white hippie tacos. Not the greatest tacos by any means, however the had one called the "Hotlanta," which is waffle battered chicken with honey and sweet potatoes.

I thought that for years. Not long ago this guy kept showing up at work with these amazing looking tacos from a small place down the street. I knew they were lingua but it wasn't what I expected to see. I finally ate one and it was bliss. Granted not all lingua tacos are good, but over by fair park in Dallas are the best tacos you'll ever eat, Lingua!!!!

Yup...good 'ol USDA Grade-A Choice Tuna Taco's, a.k.a. Furry Fish Taco's. Not to be confused however with the ubiquitous bearded clam or furburger....that's an entirely different spectrum of delicacy. :lol: :D

BTW, has anyone ever had "Box Lunch at the Y"? :)

I used to get tacos outside of the clubs in Mexico 3 for a dollar in the 90's. Life was muy bueno!

as for family run Mex... as a rule of thumb... the more hole in the wall it is... the better it usually tastes. Accept no fancy ass substitutes!
