Fish will taste” less fresh" if it is a day old.
If you have had the opportunity to eat fish that was alive moments before it was cooked, then you will know the difference. I don't buy into the "stress hormone" idea, at least not with fish. It makes a difference with lobsters because they will curl up when scared. This makes the meat tough. They don't always taste odd if they are not relaxed and I’ve seen them produce the same flavour even if they have been kept dark and quite before cooking.

Bigger game fish can taste odd if not rested for a while after killing, and most of us only get to eat it after it has been dead for at least a few hours, and that probably is all about stress. There is a "proper” way to kill all fish though.
Sashimi chefs take that sort of thing very seriously.
They use a spike stuck into the back of the head and up into what passes as a brain.

That has got to be the lamest and worst excuse (not that there's any excuse, unless you're batshit) to do that. "I'm challenging people's thinking." No, you're not. I remember reading an interview with Hunter Thompson and he was talking about hunting (buffalo, possibly) and he mentioned that he won't go after game he's startled because the adrenaline gets released taking away the flavor. Not that he's an authority, but it made me think of that.
