Did a quick search and didnt find an answer so here goes
I've got my midi controller set up so that the pads control lfo rate values of a synth but when I record my pad hits in Ableton Live, there's no lane or view where I can see whats being recorded. I can hear the automation full well but I cant change it or quantize it. What am I missing?

is it an abletonsynth or a 3rd party VST? and are you recording in arrangement or a clip?
automation of abletoninstruments cannot be recorded in clips, however if you midilearned the LFO-rate of a VSTsynth it can be recorded as an clipenvelope.

another Q: is a "clip envelope" something that happens only in the "session view"?
I'm used to working in linear mode (cubase etc) and most preferably I would like to see the automation changes on a separate automation lane or midi clip in the "arrangement view" which could then be tweaked manually if I mistakenly trigger the wrong pad (= wrong lfo rate value).
I know that there is a way of mapping (with the "configure" function) the rate knob of a plugin (incl. third party) to a virtual pot or macro inside ableton but where I run into problems is assigning different fixed values of that pot (1-127) to different pads. Say I want to jump from 1/4 to 1/12 its easier if its on fixed value pads instead of using a pot on the midi controller. Any help on that ?

as I understand, a clipenvelope is created when recording a clip in sessionview while tweaking a CC.
Of course can also record in arrangement and copy the recording to a slot in sessionview.
If you recorded in arrangement you can view the automation in a seperate lane by selecting the parameter in the trackheader and clicking the + in the righthandcorner of the trackheader.
You shouldn't have to configure the LFO to an ableton macro if the pads can send a CC plus a certain value (0-127).
This CC is being recorded in a cliprecording and in arrangement.
