plugins with pre-mapped midi mappings

Ok...need some help.

It seem that some plugins (in my case fabfilter twin) comes with some pre-mapped midi setting. I was turning one of the knobs on my akai mpk25 while playing and it tweaked the resonance and then another knob messed with the semitones in one of the oscillators.
Is it possible to remove these factory settings...??
