BCR2000 - Push Encoders - TURN: Change Value; PUSH: Restore

1º How can I do to assign a push encoder in order to do this: Turning it changes the value. Pushing it sets the value you want.
For example, in the "Looper" (Ableton Audio FX) and with the BCR2000, I want to control the "Speed". So when I turn the knob it increases or decreases the speed and then, when I want to restore the value to "0", I push the encoder and it sets the speed to "0" again.

2º I couldn't do it so it might not be possible but... Is there a way to bind the little triangle above the knobs, (in Ableton software) that restores the value, to a MIDI command? That would make things easier in point 1º.

3º This could be the most unlikely but... Is it possible to change the display to show values not between 0 to 127 but the real values? (for example in "pan", to show from -50 to 50 and not from 0 to 127)
