question about recording automation in arrangement view

say i'm recording multiple parameters of automation in the arrangement view, how do i keep it from overwriting my last automation recording when i go to record a new parameter. so say i wanna record myself turning 4 or 5 knobs and i can't do it all in one take, is there a way to record each knob separately? like if i could set it to only overwrite automation when i'm actually moving the knob that'd be great
