Setting shuffle and or swing

Hi , I'm still really new to producing. And would like to do stuff in the garage genre. Now I read a lot of tutorials talking about setting the swing or shuffle . What is this and how can I do this.

Hi funken, great intro to your reply by the way.
I've been trying it now. And followed your steps, but the thing is when you at set your quantise to a 100 is this at the quantise settings? And is it the box that says amount? And when you mention changing the timing, whe can I do this?
