I've done some searching and found the common ones that people seem to use, but it also seems like there's a lot more commands than what are commonly used. Is there an exhaustive (and up to date!) list available anywhere? If not..can we compile one?

Some of them you really don't want to tinker with, they are really just there for debugging.
Having said that Madeleine Bloom is a good source. She worked at Ableton HQ for years and has all the inside knowledge. These articles are from 2013, but I don't think an enormous amount has changed in the Options in the last 2.5 years. There may be some (9.2 and 9.5 brought big changes), but I don't know what the new options are.
she explains stuff fully and correctly in FOUR videos. She ain't guessing, like most people are.
