I don't really get how some MIDI CCs are assigned to specific things, and others are undefined. what happens if I assign a button on my FCB1010 to a CC that's predetermined for a specific function? I ask because I have more buttons on my FCB1010 than I have undefined CCs, and I have more things I want to assign to my FCB1010 than is possible if i just stick with the undefined CCs. 10 banks of 10 buttons = 100 opportunities, but only 39 undefined CCs?
Is there a laymen's terms explanation of this stuff? Thanks.

You might only be looking at the 'standard usage'. This applies mostly to manufacturers/programmers of vst and synths, etc.
Live doesn't have any actual pre-determined cc's, ....generally. So, if you can map it, you can use it.
Things I'd avoid are pitchbend and 64 (sustain pedal).
Also, if you change the midi channel of your board to something your other devices don't use, you can completely have free reign.
If you run out of cc numbers to map, that's the trick, is changing midi channel. In fact, if your stuff is mapped to a 'global' midi channel, it means all your pedals can change all at once to a new midi channel when you change the global channel (not sure the fcb supports that), then you'd be able to take your 100 and multiply it by 16
If you're not using any other gear, and you're not piping it into vst (vst instruments specifically), then you can just map to your heart's desire.

that's great to know, I can definitely set this to a MIDI I don't use for anything else. I'm will probably only use this and Push2, do you know if the Push2 is on any specific MIDI channel or uses specific CCs?

Live uses 'control surfaces' to communicate with things directly, sidetracking midi mapping entirely.
However, in the 'user' mode, it uses midi channel 1 I believe.
If you're not mapping anything in user mode, you won't have to worry about the two conflicting. Otherwise, 2-16 should still be free.
To see what channel is being used, you just map something and it'll give you the number of the ch and cc.
