Ableton Live 10.0.1 mac OS 10.12.6
also, notice that on the left EQ8, the spectrogram doesn't show up

there seems to be a bug in the Adaptive Q system.
if you turn the Adaptive Q off before first tweaking the shelf, then when you subsequently toggle Adaptive Q on/off, it enables/disables correctly.
on the other hand, if you have the Adaptive Q on the first time you tweak the shelf, then disabling it does not reset the filter to a standard shelf.

the two high shelf filters have identical settings, yet their filter shapes are different...

the spectrogram issue should be adressed asap, too

yes and the devices still can process sound as expected. maybe is just a GUI issue

I can't reproduce this in Live 10.0.2 release. Please revisit the instructions for how to to make this happen.

i'm using 10.0.2.
this morning, i can't reproduce the behaviour either...
maybe i didn't have the Q turned up on one of my many EQ8 instances when i was testing last night? not sure...
also, to be clear, i have never had problems with the signal display not showing up.
