Recently got a secondhand Yamaha CP300. Lovely weighted keys, plan to use it as studio keyboard.
Running a 2015 MacBook Pro Mojave
2012 Drivers are here https://uk.yamaha.com/en/support/update ... r_mac.html
But having installed them, I'm still getting no option in the Midi System Preferences, nor any signs that midi signals are being received.
"Midi Out" button is active on Yamaha
Any thoughts?

I used Yamaha boards for 12 years and never had issues with them showing up in Live out of the box. Hard to say from your post what the issue could be.
Check Audio MIDI Setup to make sure the CP300 is there first. If it's not, Live will definitely not see it.

Initially the CP300 wasn't showing up in the Apple Audi Midi SetUp Settings.
A friend suggested looking up Midi Connections available through "About This Mac">"System Report">"USB"
-super useful because I could see that the CP300 was connected.
So a simple reboot and Boom, we're in play.
