Beat Stretch: the ":2" and "x2" buttons on a MIDI Clip. Those can't be MIDI assigned, for changing real-time I think it needs M4L, CLyphX or mutateful
Clock shift: You can just move play and loop start markers. Those seem to be MIDI assignable. Some people just mess with Track Delay.
Gate Time: Note Length device
Velocity offset: Velocity device.
Track number: can be set with extra tracks and routing, but for a "plugin" I think it has to be M4L, CLyphX, etc.
Transpose: Pitch, Scale and maybe Random devices.
Unison: I don't think Live allows playing multiple "copies" of the same note at the same time (even if a plugin could do it). Try an audio FX instead.
Octaver: Chord or Pitch devices (maybe in a MIDI FX Rack)

(Offtopic, but just discovered the MIDI Monitor device in Core Library has a hidden "X" button above "Freeze", lined vertically with the round color filter buttons, that turns on a "firework" visualization for MIDI notes. Kinda useless but nifty.)
