After installing 11.1, some of my vsts won't load, most of my shortcuts (collections) are broken, and my default template is throwing errors because it can't find vsts. This is not the kind of thing you want to see with a minor update. Ugh

Update: I got this working by:
After updating to Ableton Live 11.1, none of the host integration features are working on my Komplete Kontrol S49 mk1.
I can manually switch between MIDI and NKS modes, but not being able to switch tracks or use the transport controls is a pretty big problem.
I don't see why it would be an NI issue, since it worked fine in Ableton Live 11.0.x.
- Rebooting my machine. This brought back the "Komplete Kontrol DAW - 1" device, which is the one that needs to be selected as the control surface Input and Output. That got the transport controls working, but I still couldn't navigate tracks/clips with the arrow buttons.
- To get track/clip navigation working again, I had to switch the AU version of the required plugin ("Komplete Kontrol AU.adg"). The VST version always worked fine before, but now it just doesn't. I tested it many times…only the AU version will work. What's weird is the plugin itself works fine (in the VST version). It's just the host integration (track/clip navigation with arrow buttons) that doesn't work.

On this page, they say to install the universal binary on any mac from Mojave to Monterey.
Apple Intel build is "High Sierra only".

Ok all.
I finally installed the Universal binary version of 11.1 on my old mid-2012 macbook pro (running Catalina).
I didn't have any issue, no plugin was missing (after a quite long re-scanning : I've got a lot of plugins). More importantly, I noticed what seems to be a little improvement in stability and CPU use.
And the new features of 11.1 are very welcomed (for exemple the new clip window, or the fact you can take the devices that are used on a track from the browser view).

Update on my Beta vs release issue.
The beta still continues to be more stable for me than the release. I used the universal installer via ableton.
Opening the same project in Beta I get 45% CPU load and on the release version I get 65% and cpu overload indicators.
I'm not sure why this is, but I'll continue using the beta until they perform similarly.

I have had this same problem. Windows 10. Ryzen 2700x. 64 gb ram. ssd-nvme. My work around is delete the offenders from the template, resave the template. Close the program / reopen. Then when the system rescans all of my VSTs, I reapply the VSTs... resave the template... it's weird but it worked.

How do you know if it's set to launch in Rosetta?

I've just submitted a report of the LFO device not working in 11.1 on Windows 10. It loads fine, but it cant map to anything...

My God thank you for this it was driving me insane - I wasted hours trying to figure out what the hell was going on with all my missing VSTs.
