I’d like to work with a collaborator offsite and want to bring the least amount of stuff possible.
If P3 phones output can drive two sets of cans, then I can skip a headphone distributor amp.
Would plugging two sets of headphones in via a stereo y-splitter cable do any harm to the unit?

I guess it depends on the Ω of the 2 headphones. I don't know if the headphones output was designed with this use-case in mind (i.e I don't think so), but you won't cause any harm trying it.
