I want to comp, and select the best pieces as I go.
but by default, Ableton will erase all of your comped selections with the newest take.
Is there a way to make Ableton not do that?

Huh? Do you mean over-write when you're loop recording audio? Just open the take lanes. All the previous loops are there. If you're on an older Live, double-click and open the editor. Everything you recorded will still be there if you scroll to the left. Live does not immediately erase any audio you record.
MIDI is another matter, that's destructive unless you put it in add mode using the plus icon at the top.

Then copy your comping from the track's main lane and paste it to another/new Take lane.

Maybe I'm not understanding, but if you use Punch In and Punch Out, it shouldn't overwrite. I think it only does that if you re-record the whole section. Now that I think of it, it would be cool if you could mark sections as "protected", like a reverse punch in/out.
