You can load clips into RAM in live, so that when you play them, they don't stream from disk, instead they are played directly from the ram, avoiding disk overload. This is particularly useful with slow laptop hard disks. Check the clip's properties, there's a "RAM" button.

As for the latency, you can change it in your sound card's driver's options. Don't know the specifics, since you are on MAC, and I'm a PC user.
