So, does Ableton only allow use of a single stereo output?
Seems like I've confirmed that even though I have 8 audio outputs on my audio interface, Ableton Live will only allow me to use a single stereo channel for a session. I want to be able to send each separate track to it's own dedicated output. Apparently Ableton doesn't support this...is this true?

These guys are quite right.
I've been doing this myself all day today, in order to set up independant headphone mixes (from the channels sends) on separate outputs on a multi-channel soundcard.
If you want to do stuff like this, make sure that you click the INPUT CONFIG and OUTPUT CONFIG buttons in the CHANNEL CONFIGURATION option, in the SETTINGS section halfway down the AUDIO tab of Ableton Live's preferences dialog.
Just choose the inputs and outputs you need - remember that enabling unused outputs does use up a bit of CPU power (not much though)

Extra Master outputs needed...
Although I understand that you can send individual tracks to sepereate outputs I would like to send the master to seperate outputs i.e 1+2 to the desk and 3+4 in an onstage monitor, (this would avoid any latency issues on hearing myself). How could this be done?
The only way I can achieve this at the moment is to use the returns but this makes the set look very messy as I have returns set up for other things as well. It would be great if Live had an option to create extra rows of output options on the master.
Make any sense?
