Ok..lets say I have my track laid out in the arrangement view, and I want to change one of my plugins automation. Is there a way to play the song and override the existing automation with my midi controller? The way I am doing it now is by drawing the automation lines in each individual track, but that way is very time consuming and not the results I'm looking for. Any help would be appreciated.

just enter record mode whenever you want to override what's already there. as soon as you change a parameter, from that point on the paramater will overwrite with your new input.
some people have technical problems with this actually working, but don't sweat that until it happens to you
