Yeah Holdsworth is an aquired taste, I can listen to him once in a while and he's awesome, but it's kinda like candy, you can have to much of a good thing :)

Weckl is just awesome, been my favorite drummer for many years now, I saw him with Chick Corea Electric Band here in Copenhagen years ago, was just blown away by his technique, saw him at a drum clinic here in DK a while ago, his finger technique is mindblowing, my fingers were bleeding for months to learn that.

Also check out an aussie drummer David Jones.
He's a lil different to most fusion drummers.

Dennis Chambers, yeah he was with John Scofield for a while, great player, saw him with scofield here at the Danish Jazz festival some years ago.
