As far as simply great audio is concerned, you guys should check out VERSUS.
It is a japanese action film and the audio blew me away.
The roundhouse kicks come with jet engine noises behind them and the punches and finishing moves have huge delays on them. Every action film should be done this way.
Also, I've heard that in HEAT, the gun fight in front of the bank used production audio, all the actual gunshots that you hear are being produced by the guns on screen at the time of filming.

This may sound like a weird choice, but one of the best films for sound design for me is Master and Commander: The Far Side of the World. Seriously atmospheric in a pre-technology way, and the battle scene sfx are superb
