I've got a Dual 2.7 G5, MOTU Traveller and 4.5GB of RAM running Abelton rewired into Logic. The machine is rock solid and never even hiccups.

I use a dual 2GHz, 2.5GB RAM, and a Yamaha 01v.

Been gigging solidly for a year doing Live audio and Arkaos video both on the G5.

Rock solid. I'm going to pick up a second one as backup, though.

If you are switching to a Mac, and don't already have PPC software, I'd consider going with an Intel box at that price. If you already have the non-US software, disregard.

G5's are solid machines, but you might want to think about going for an Intel. I can't back this up, but I'm sure I read that a MacBook benchmarked the same as a Dual G5 PowerMac.
