Can I only make one automation assignment on a given track? It seems that when I try to make a different assignment in the arrangment view, my original automation is erased. I need to be able to do a lot of assignments..

You can automate whatever is on the track - limitless, I think. In the arrangement view, there will be a pulldown that I think defaults to track volume (or what is normally visible). There should also be track panning, plus whatever effects are on the track. Simply select one, and the red line will appear (you have to expand the track to see the waveoforms) and you can draw with the pen tool or use points to create arcs or record automation using hardware encoders, etc. They should all run - only reason they wouldn't is if you turn the effects off.

You can have any number of automated controls on a track, but you can only have one automation line visible at a given time.
Sounds to me like you are making your automation changes by using the control itself rather than dropping points on the automation line and then adjusting those.
As I said, check out the guide, it will get you started on the right foot.

It sounds to me like you're probably recording a whole new midi clip over the top of the old one which will erase any previous automation. Just unclick the red "Track Record enable" button while recording and your problem will be fixed. Also make sure that on the tracks automation drop down menu that you DON't have "Show automated parameters Only" selected because that will cause you problems as well. Use that only when you need to and then turn it off again. Hope that helps
