beginner question - mixdown

Hi. I'm used to the old 4-tracks, so I hope this makes sense.

I record just guitar/vocals with a mic.

I would like to mixdown... how can I do this if I want to move volume/faders and turn off certain tracks during the mixdown? The 'render to disk' option doesn't allow me this option. Is there such thing as a mixdown where one can make changes to tracks (off/on, volume) while mixing down?

I'm used to the old mixdowns, where I can move around knobs while the final product is being recorded on a separate source (cassette, DAT, etc.)

You probably need to mix everything down to one "mix" track, allowing you to use your faders to get a final mix. Then render to disk that final mix track. Anyway, that's how I do it in Pro Tools. You can also automate your various parameters like "volume" and do it that way. Maybe some one else can give you more details about routing. Hope this helps. Happy Xmas!
