Can anyone tell me how to record the Control data and other extended MIDI messages from a remote hardware source?

Hi mate try this:
Load up a soft synth into a midi track.
Now look down at the the box that appears and there should be three circles with icons in them. The middle circle has a triangle, now push this and a whole array of controller sliders will appear.
To work out what they control push the circle with the little spanner in it.
You soft synth should appear, move the filter or LFO or what ever function you wish to assign. You should now able to see one of the live controllers moving, there may be a lot of controllers so you might miss it at first but one should be moving in unison.
Now all you do is assign your CC controller to the live plugin, I'm assuming you know how to do this, so I wont bore you with an explanation.

What about recording the Midi CC itself, without using it to automate a VST, but some external device for example?

change to track view (don't know if this works in session), select your instrument track (MIDI, no VSTi), press record ready. play / twiddle knobs.

it's not rocket science. it just works.
