you can do this a number of ways:
1. use the UTILITY plug in using the MONO preset (as longjohn suggested)
2. use stereo imager VST like WAVES S1 StereoImager and narrow the stereo field
3. you can use a program like Wavelab / Soundforge / Peak to just select the LEFT or RIGHT channel and copy/paste that into a mono file.
4. you can pan the track to the hard left or right depending on which side of audio you want and break it out externally on a mixing desk.

up to you...

I think the question here is about focusing on a single channel of a stereo sound, i.e. left or right. The Utility solution is almost right, but the Mono preset isn't the answer. If the Utility is set to mono, that means that the two separate channels are summed together into one. Playing this back in stereo only creates two identical streams of audio, both containing the entire range of data. The correct way is to use Utility, but select Left or Right from the box that reads Stereo by default. The other option available here is Swap, in case you want to switch the left and right feeds, i.e. left for right, and vice versa. Choosing the Left or Right option solos only the selected side. If you wanted to do a true dual-mono split, you could create a new audio track, route its input from the track you want to use, set monitoring to In, place Utility on both tracks, and select Left for one, and Right for the other. Now you have even deeper control over their exact placements in the stereo field, with each side having its own independent and relative gain and panning controls

for the record, I said nothing about using the mono preset. that makes no sense. I assumed it was pretty self-explanatory how to use the utility plugin
