I've never tried to do this in Live - to select a bunch of individual channels and have them grouped so their relative levels move simultaneously. I know that you can send them all to a submix track and do it that way, but is the first method possible?

no, unfortunately not. It's a feature that I (and quite a few others) have been wanting for ages!!
I only have three issues with live now, groove templates, multiple channel grouping (like you just said) and curves on automation.

Cheers. I suspected as much...
I'll add it to the wishlist...together with a multiple take audition feature. I'm getting a bit sick of moving audio in Arrangement off to the empty space at the right of the track (or, even worse, opening a whole new track) while I do another take of something.
