how can you make a midi control send UNDO command?
Yes, I've searched. I can't seem to find an answer so maybe it doesn't exist.
Is there a way to assign a midi note to CTRL-Z (undo) or vice versa? So you can tap a button and undo instead of going to the keyboard. I thought his would have been simple, but apparently I'm too drunk to enter the correct words in a search engine OR too drunk to figure it out.
I've looked in the manual, I've searched google, I've searched this forum... no dice. The only way so far I can tell is buy nativeKontrol for the Korg PadKontrol. Otherwise? what? you can't assign a pad or button on the device (or any midi controller device) to push CTRL-Z for you?
Any tips appreciated.

You can use the Mackie Control protocol to easily do this with no 3rd party software or re-mapping. (and does not require any Mackie Product)

Re: how can you make a midi control send UNDO command?
yeah, use Mackie Control, especially if you have a footpedal. I use the FCB1010, and it works like a charm. One thing though, that I'm not sure is adressed in the documents from the above link. If I remember correctly, you have to use MIDI Channel 1 for this to work. I think that's what my FCB1010 is on.

If you own a Novation Nocturn or Remote SL, the pro version of the Automap software lets you assign midi controls to keyboard shortcuts

Question :
Does the undo in mackie control erase a clip while recording it? Because Ctrl-Z doesn't.

There's also a Mac version for Midi Translator if you purchase the PRO version...
You won't regret it!

I haven't tried it but I think it does the same as what ctrl-z would do.

I just figured out how to do this tonight using Midistroke which is free. I posted the instructions for it on another board:
