Ever heard of The Books?
They use guitars, cellos, and a lot of vocal/electronic samples. Not too 'minimal', but you might dig it.

how long do you think it might be before he could sit back and listen to an album he made for himself? I'm kinda thinking we wanted to listen to something right now.
