Another thing you might want to consider is getting/using software that allows for tuning scales. What makes something sound "ethnic" usually has more to do with its tuning and the scales used than it does with instrument design--generally speaking. For instance, I use scala, and program my soft synth with Indonesian tunings. Put the synth on a bell patch and i have an "ethnic" instrument.
