some things not already mentioned:
Dopplerpad is something to check out, too bad they don't have a Lite version. But it's a fun performance-oriented tool. Let's you write loops and mix between them on the fly, pretty slick.
They're coming out with a 3G S-only version of Technobox with another 303.
Aura is pretty awesome if you like ambient things. 4 evolving pads and some sound makers, great UI.

Jailbreaking:
I jailbroke my 3G S as soon as it was available via Purplera1n, but if you're on 3.0.1 you'd need redsn0w. Many guides online, but with apps like Categories, 5 icon dock, 5 rows and 5 columns, SBSettings and all it's lovely toggles I don't think I'd enjoy my iPhone as much as I do when it's jailbroken. 3G Unrestrictor is a nice thing to have if you want to download apps larger than 10MB or otherwise have reasons for apps to see 3G as wifi (Skype calls, anyone?). Winterboard for theming/sound changing. I have had to restore my phone once because I had a shady repository installed to Cydia and the apps on it were of questionable quality. I thought I was installing one app from a trusted repo and it was the cracked version from the shady one =/ Live and learn.
AppStore:
TweetDeck if you like Twitter and use Tweetdeck. Moyo, if you have a lot of friends with iPhones and want a blackberry messenger-like experience. It's free for now.
I'm sure there's more that I can't think of off the top of my head. If you're into drawing/painting, Layers or Brushes would be great to have.
