One thing which only exists in W7 Pro and above is the ability for the box to be a Remote Desktop *host*. RD client is supported all the way down the chain (with possible exception of Starter), but RD hosting starts at Pro. That for me is a big deal and pushes me beyond Home Premium. Plenty are the times I want to administer the box without going into a console session.
